Can anyone else relate to not wanting to get all dressed up and go out to a fancy, over-priced dinner surrounded by a bunch of other people for Valentine’s Day? Gosh that’s just a lot of work and let’s be honest, it’s not very romantic to kiss in front of a bunch of strangers or to watch a bunch of strangers make out in front of you.

Besides, that expensive and predictable chocolate lava cake’s got nothing on these Cherry Vanilla Swirl Brownies! Seriously, these brownies will blow your mind.

I believe the phrase “flavor orgasm” was used when I gave one of these to Matt to try. So yeah, these Cherry Vanilla Swirl Brownies will not disappoint. They are incredibly rich and fudgy– the ultimate chocolate brownie as is– but then that vanilla bean-laced cherry jam sends them over the edge.

Make these for your love and they will fall in love with you all over again.

And if you don’t have a true love to share this day with, well these brownies will more than make up for that. Who needs a man when you’ve got chocolate?

Ingredients
Cherry Vanilla Jam
  • 16 oz frozen dark cherries
  • 1/4 cup coconut sugar
  • 1 vanilla bean
  • 2 tsp balsamic vinegar
Brownies
  • 7 oz dark chocolate chopped, or about 1 cup chips
  • 4 oz butter grass-fed
  • 1/2 cup coconut sugar
  • 3 eggs organic/pasture-raised
  • 1 tsp vanilla
  • 1/2 cup almond flour finely ground, such as Blue Diamond or Honeyville
  • 1/4 cup tapioca starch/flour such as Bob's Red Mill
  • 1/4 tsp salt

  • 16 oz frozen dark cherries
  • 1/4 cup coconut sugar
  • 1 vanilla bean
  • 2 tsp balsamic vinegar

  • 7 oz dark chocolate chopped, or about 1 cup chips
  • 4 oz butter grass-fed
  • 1/2 cup coconut sugar
  • 3 eggs organic/pasture-raised
  • 1 tsp vanilla
  • 1/2 cup almond flour finely ground, such as Blue Diamond or Honeyville
  • 1/4 cup tapioca starch/flour such as Bob's Red Mill
  • 1/4 tsp salt

Instructions
  1. Combine cherries and sugar in a large saucepan over medium heat.
  2. Slit the vanilla bean lengthwise with a sharp knife to expose the seeds. Use the back of the knife blade to scrape the seeds from the bean. Add seeds and bean to the pot with the cherries, along with the balsamic vinegar.
  3. Bring the cherry mixture to a boil, stirring constantly to prevent it from scorching. Turn down the heat to a steady simmer and continue to cook, stirring often, until the jam has reduced, about 30 minutes. There should be very little liquid left, but it should still be spreadable.
  4. Remove the vanilla pods. Set jam aside to cool.
  5. Preheat the oven to 350℉. Lightly grease an 8"x8" baking dish with butter or coconut oil. Line with parchment paper, if desired (it's not necessary, but makes it easier to remove the brownies).
  6. Combine chocolate and butter in a large saucepan over low heat. Stir until melted and smooth.
  7. Remove from the heat. Whisk in the coconut sugar. Add the eggs one at a time, whisking until smooth. Stir in the vanilla.
  8. Add the almond flour, tapioca flour and salt. Whisk well until completely smooth.
  9. Pour the brownie batter into the prepared pan. Dollop the jam evenly over the surface of the batter. Gently swirl the jam with a knife.
  10. Bake 25-30 minutes, until the batter is set and a toothpick inserted in the middle comes out with just a few moist crumbs.
  11. Let cool completely before cutting, otherwise the cherries will make a gooey mess. Or, if you don't mind a gooey mess, serve warm with some vanilla ice cream or whipped cream dolloped on top. Enjoy!
Recipe Notes

Brownies can be stored in a sealed container on the counter for up to five days. Store in the fridge for up to seven days (they will get quite firm in the fridge) or freeze for several months.

*To make these dairy free, substitute coconut oil for the butter.
