Lamb is seriously underrated. It has so much more flavor and richness than your typical ground beef. If you’re one of those people who find it “gamey”, it’s time to get your hands on some quality lamb. Your local farmers market is an excellent option– that’s where we buy our lamb and it is some of the best I’ve ever tasted, and surprisingly affordable. But even Trader Joe’s offers grass-fed New Zealand lamb that is still a great choice.

The flavors of these Currant Caraway Lamb Burgers complement the meat beautifully. The caraway seeds are a nod toward that classic pairing of lamb and mint jelly, the dried currants adding a touch of natural sweetness. These burgers are simple enough for a weeknight meal (they take minutes to throw together), but could easily be jazzed up for a dinner party, served over a bed of mixed greens alongside some roasted veggies. Yum!

You might be surprised by the addition of the egg in these burgers, but it’s my secret weapon. The egg helps the burgers hold together, as well as adding a lightness that makes the burgers extra succulent. That being said, if you have an egg allergy or just don’t happen to have one on hand, you can omit the egg and these lamb burgers will still be divine.

  • 1 lb ground lamb grass fed
  • 1 egg
  • 2 Tbsp dried currants
  • 1 tsp Worcestershire sauce
  • 1/2 tsp caraway seeds
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp chili flakes optional

  • 1 lb ground lamb grass fed
  • 1 egg
  • 2 Tbsp dried currants
  • 1 tsp Worcestershire sauce

Instructions
  1. Combine all ingredients in a mixing bowl.
  2. Use your hands to thoroughly mix the ingredients so they are evenly combined.
  3. Divide the mixture into four equal-sized portions and shape into patties about 1/2-inch thick.
  4. Meanwhile, heat a skillet or griddle pan over medium-high heat.
  5. Cook the patties until golden brown, about 6-8 minutes, then flip and cook on the over side until golden, another 6-8 minutes. If you prefer your meat medium with a little pink, go with the lesser cooking time. If you like it well done, go with the higher cooking time.
  6. Serve as is or on a bed of lettuce. Enjoy!
