Back before we started trimming every bit of skin and fat from a chicken breast, before we became so disconnected from where our food comes from.

From a nutrition standpoint and from a culinary standpoint, cooking meat on the bone is the way to go. It helps keep the meat juicy, it infuses it with extra flavor, and as the bone breaks down, it also provides some collagen, gelatin and minerals. There’s a time and place for more involved meals, but for the most part meals need to be thrown together after a long workday. These Honey Mustard Chicken Legs will have the whole family licking their fingers clean, asking for more.

  • 2 1/2-3 lbs chicken legs (drumsticks) bone-in, skin-on, organic
  • 2 Tbsp butter, melted grass-fed/organic
  • 2 Tbsp dijon mustard
  • 2 Tbsp honey
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
  1. Preheat the oven to 400℉. Line a rimmed baking sheet with aluminum foil. Place a wire rack on top of the baking sheet and spray with nonstick spray (coconut, avocado, or olive oil).
  2. In a small bowl, combine the melted butter, dijon, honey and spices.
  3. Place chicken legs in a large zip top bag. Pour the sauce into the bag, seal and use your hands to toss the chicken in the sauce so it is coated on all sides.
  4. Set the chicken legs skin-side-down on the baking sheet. Reserve remaining sauce. Roast for 30 minutes.
  5. Remove the chicken from the oven, flip over, and coat each leg with the remaining sauce. Roast for an additional 30 minutes, until golden brown and sizzling. Enjoy!
