I’ve been trying to come up with something creative to say about these Instant Pot Asian Beef Short Ribs, but I’m too distracted by these photos, daydreaming of the next time I can make this delicious dish!

Short ribs are one of my favorite cuts of meat. They are affordable, flavorful, and when cooked low and slow, extraordinarily succulent and rich. In the past, I would cook short ribs all day in my slow cooker, but now thanks to my handy dandy Instant Pot, I can have tender, juicy short ribs in about an hour!

While bone-in short ribs are readily available from your local butcher, these boneless beef short ribs from U.S. Wellness Meats are seriously incredible. This post isn’t sponsored, I just love this company and their high-quality, pasture-raised meats!

I already waxed poetic about my Instant Pot in my recipe for Smoky Instant Pot Beef Brisket. Its uses are endless– just the other night I steamed up some artichokes in 20 minutes flat. Broccoli can be cooked in about 3 minutes. It’s a really nifty all-purpose gadget that I totally recommend!

If you don’t own an Instant Pot, you can make this recipe in your slow cooker as well. Check the notes at the bottom of the recipe for instructions.

Ingredients
  • 2 lbs boneless beef short ribs from U.S. Wellness Meats
  • 1 Tbsp coconut oil
  • 1/2 cup coconut aminos
  • 2 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 tsp fish sauce
  • 4 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes
  • salt and pepper to taste

Ingredients
  • 2 lbs boneless beef short ribs from U.S. Wellness Meats
  • 1 Tbsp coconut oil
  • 1/2 cup coconut aminos
  • 2 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 tsp fish sauce
  • 4 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes
  • salt and pepper to taste

Instructions
  1. Set the Instant Pot to "Saute" mode and let heat.
  2. Sprinkle short ribs generously with salt and pepper.
  3. Add coconut oil to Instant Pot, then add short ribs.
  4. Sear short ribs on all sides until browned.
  5. Meanwhile, combine remaining ingredients for the sauce.
  6. Once the short ribs are browned, pour in the sauce.
  7. Set the Instant Pot to "Manual" and increase time to 50 minutes. Put on the lid and make sure the vent is set to "Sealing."
  8. When the cook time is done, hit the "Cancel" button and let the Instant Pot come down in pressure naturally. In other words, do not open the vent. The ribs will be done when the metal valve next to the vent has gone down and you are able to open the lid. This usually takes another 20 minutes.
  9. Remove the short ribs to a cutting board and slice, shred, or chop to your preference.
  10. Use a large spoon to skim most of the fat off of the surface of the sauce.
  11. Serve the ribs over rice or cauliflower rice, spooning the sauce over the top. Enjoy!
Recipe Notes

Note: This recipe can be made in a slow cooker if you do not have an Instant Pot. Either sear the ribs in a pan before adding to the slow cooker, or simply skip this step. Pour the sauce over the ribs and cook on low for 8 hours until the meat is very tender. As above, remove the ribs and skim the fat from the sauce before serving.
