Back in 2013, Cinco de Mayo fell on a Sunday, so my friends and I decided to hold a party the Saturday before, on May 4th. We kept calling it our “Cinco de Cuatro” party, and I don’t think it was until several drinks had been consumed that evening that we realized we should have been calling it “Cuatro de Mayo.”

Clearly our Spanish skills need some work…

This recipe was actually born from the aftermath of a different party. After hosting New Year’s Eve, I was left with two bags of limes in my fridge. What to do with all those limes? I started brainstorming and came up with the idea for this beautiful Paleo Coconut Lime Pound Cake. I’ve been dying to share the recipe with you ever since!

If you’re a fan of lemon pound cake, you will love this zestier, creamier, coconutty version. I love the texture of the shredded coconut in this loaf so much. If you’re missing your typical glaze, melt together some coconut butter with some honey and drizzle it over the top. It would be divine!

Ingredients
  • 1 cup almond flour
  • 1/4 cup tapioca starch
  • 2 Tbsp coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp lime zest finely grated
  • 1/2 cup coconut oil softened
  • 1/2 cup honey
  • 3 eggs
  • 1/2 cup full fat coconut milk
  • 1/4 cup lime juice

Instructions
  1. Preheat the oven to 350℉. Lightly grease an 8.5"x4.5" loaf pan and line with parchment paper.
  2. In a large mixing bowl, combine the almond flour, tapioca starch, coconut flour, shredded coconut, baking powder, salt and lime zest. Set aside.
  3. In another bowl, whisk together the softened coconut oil and honey until smooth.
  4. Whisk in the eggs one at a time until creamy.
  5. Whisk in the coconut milk, then the lime juice.
  6. Pour the wet ingredients into the dry ingredients and stir until smooth.
  7. Pour the batter into the prepared loaf pan. Bake for 25 minutes.
  8. Remove from the oven and lightly tent the loaf with foil to prevent the top from burning. Return to the oven and bake another 20-25 minutes until a toothpick inserted in the center comes out clean.
  9. Let cool 10-15 minutes in the pan. Run a knife along any edges touching the pan, then gently remove from the pan using the parchment paper, and let cool on a wire rack another 30 minutes. Slice and enjoy!

Store in an airtight container on the counter for up to 3 days, or in the fridge for up to 7 days.
