A grain-free version of traditional Irish soda bread, this Paleo Irish Brown Bread is hearty, slightly sweet, and perfect served alongside corned beef and cabbage for St. Patrick’s Day.

Most people think of Irish soda bread as being sweet and currant-laden, but in all the time I’ve spent in Ireland, I’ve never eaten such a bread. Instead, it’s the hearty, whole wheat brown bread that’s served alongside almost every meal, from a traditional Irish breakfast, to a warm bowl of stew, to a hot cuppa tea.

I fell hard for this bread. Slathered with butter and a thick smear of blackcurrant jam, Irish brown bread can be a meal in and of itself. In Ireland, it’s made with a certain type of “wholemeal” flour that’s more coarse than our American whole wheat flour. The flecks of wheat germ make the bread toothsome, slightly nutty and so satisfying. When it came to making a grain-free, paleo-friendly version of brown bread, I knew it would be tough to recreate that texture and flavor…

It took a few tries, but I finally nailed it! The combination of almond and chestnut flours, along with the addition of ground flax and sesame seeds, creates that satisfying bite I was looking for. Like any soda bread, this Paleo Irish Brown Bread is a cinch to bring together. A stand mixer makes it even easier, but mixing the dough by hand is still pretty quick (just a tad messier).

Ingredients
  • 1 1/2 cups almond flour
  • 1/4 cup golden flaxseed meal
  • 1/4 cup chestnut flour
  • 2 Tbsp tapioca starch plus more for dusting
  • 2 Tbsp sesame seeds
  • 2 Tbsp coconut sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 Tbsp butter Kerrygold, of course
  • 2 eggs organic/pasture-raised
  • 1 tsp apple cider vinegar

  • 2 Tbsp coconut sugar

  • 1 tsp apple cider vinegar

Instructions
  1. Preheat oven to 350℉. Line a baking sheet with parchment paper and lightly dust with extra tapioca starch.
  2. Combine dry ingredients in a large bowl (or stand mixer with paddle attachment).
  3. Add butter & use your fingers to rub it into the dry ingredients, or mix on medium speed (you want the butter pieces quite small).
  4. In another small bowl, whisk the eggs & vinegar together. Add to the dry ingredients & mix until just combined.
  5. Scoop dough onto prepared baking sheet. Dust your hands with tapioca starch & shape the dough into a rounded loaf, about 6" across. Use a sharp knife to cut an X into the top, about 1/2" deep.
  6. Bake until golden brown & firm, about 30 minutes. Cool at least 15 minutes before slicing. Best served with lots of butter, blackcurrant jam or honey. Enjoy!
